Microwave Chocolate Cake (in a cup!)
For when you have a chocolate craving and waiting to bake a cake just won't cut it!
Ingredients
· 1 tablespoon of Nuttelex
1 1tablespoon cocoa
1/4 of a cup raw sugar
· 1/4 of a cup self raising flour
1/4 cup soy milk

· Directions
1. Melt the Nuttelex in the microwave for about 30 seconds.
2. Add the dry ingredients to Nuttelex and stir.
3. Slowly add soy milk and stir to combine all ingredients.
4. Microwave for 1 minute and then enjoy!
Variation
Macadamia brownie: add a small handful of macadamias
before cooking.
Note: This is the bestest, quickest, tastiest microwave recipe I've seen, thanks to my son passing it on to us. He made it for his Dad before driving off with his brother to catch the bus, with only minutes to spare!

1) Apple Sauce Cake adapted from an old found recipe
Ingredients
1 cup brown sugar
1 cup cold applesauce
1/2 cup olive or vegetable oil or vegan margarine softened
2 tsp baking powder/ soda*
2 tsp apple cidar vinegar
1 tsp ground cinnamon
1 tsp vanilla
1 cup raisins
2 cups plain flour
*Sometimes the flavour of straight bi-carb of soda can be too strong and often premade baking powdes have lactic acid or milk products added. My friend Robin told me how to make a mild and very effective baking powder. Make a jar of 1part bi carb and 2 parts creamof tarter. Then use 1 tsp of this per cup of plain flour or whatever the recipe calls for.

Preparation: Preheat oven to 180 degrees (170 fan forced). Grease and flour a 9x13 inch pan.
In large bowl stir together all the above ingredients except the baking powder, flour and vinegar.
Sift flour and baking powder together.
Fold in sifted flour and b p to the mixture until smooth.
Add vinegar and fold in gently. Pour into prepared pan. Bake for 45 minutes.
Apple Sauce
Ingredients:
about 6 apples, peeled, cored and chopped
water

1 cup sugar
|
juce of 1lemon

Preparation method
Place apples in a saucepan and just barely cover with water. Simmer over medium-low heat until apples are tender, 15 to 20 minutes.

Stir in the sugar and lemon juice. Cook over medium heat for 3 to 5 minutes.

NOTES:
I made this for the first time tonight. I knew as soon as I added the flour it was too sticky. Also I was too impatient and didn't let the apple sauce (really stewed apple) cool enough. It should be cold so it doesn't cook the flour before it goes in the oven. Still, it didn't taste bad specially with a hot cup of cocoa to wash it down. Outside it's windy and cold. Also you may vary flour amount depending on type of flour and moisture content of apple mix.

This applesauce cake is a tasty snack cake.
Cook Time: 50 minutes
Total Time: 50 minutes
Ingredients:
· 2 cups all-purpose flour, sifted before measuring
· 1 cup sugar
· 1 teaspoon salt
· 1 teaspoon cinnamon
· 1/2 teaspoon ground nutmeg
· 1/4 teaspoon ground cloves
· 2 teaspoons baking soda
· 1 cup raisins
· 1 cup chopped walnuts
· 1/2 cup melted butter
· 2 cups applesauce
Preparation:
Directions for applesauce cake.
Into a mixing bowl, sift together the dry ingredients. Add raisins, chopped walnuts, melted butter, and applesauce. Beat until well blended. Pour batter into greased and floured 9-inch square pan or 11 3/4 x 7 1/2 baking pan. Bake at 350° for 45 to 50 minutes. Cool and spread with cream cheese or butter frosting. If desired, decorate applesauce cake with grated orange peel and walnut halves.
